Kiki's Cornbread

Warm Cornbread in Grandma Ward's cast iron skillet. I luv this pan!
Kiki's Cornbread
1 cup of yellow cornmeal
1 cup flour
1/2 cup sugar
1 Tbsp baking powder
dash of nutmeg
1/3 cup of oil
1 egg
1 cup of milk
1/2 cup of sour cream
1 can whole kernel corn
1/4 cup butter, melted
Pre-heat oven to 400 degrees
sift together dry ingredients. Add remaining ingredients except melted butter, and mix just till incorporated. Pour into greased cast iron pan. Pour melted butter over batter. sprinkle top with sugar (the sugar is optional but I like the crunchy, slightly sweet top it bakes up) and bake at 400 degrees for 25 - 30 minutes.
Serve with campfire beans smile emoticon
Campfire Beans
1/2 pound smoked Kiełbasa or your favorite sausage, cooked and chopped
1 medium onion chopped
1 lg can of Bush's baked beans
1 medium can of tri-bean mix (black, pinto, kidney bean mix)
1 medium can hot chili beans
2 Tbsp yellow mustard
dash of Worcestershire sauce
2 Tbsp favorite BBQ sauce
2 Tbsp brown sugar
Adjust ingredients suit your taste.
Mix all ingredients together in a saucepan, simmer for 30 minutes and serve with cornbread.
