Kiki's Irish Whiskey Glazed Salmon with Lemon-Herb Rice

2 lbs Salmon Fillet, cut into 4 pieces
1/4 cup butter
1/2 cup brown sugar
1/4 cup Irish Whiskey
1 scallion, chopped
Put butter into a skillet and heat till melted, add brown sugar stirring until sugar is dissolved, place salmon fillets (skin side up) into skillet, cover and cook 5 minutes on medium-high. heat. Remove lid and flip fillets, they should have a nice caramelization on the fillet when you flip, add whiskey, cover and continue cooking for 5 minutes. If sauce seems to thick add more whiskey to thin. Keep a close eye on the fish while cooking to make sure the sauce does't turn into candy! LOL Serve over lemon-herb rice, spoon sauce over fish.
Lemon-herb rice
2 cups long grain rice
4 cups water
2 Tablespoons fresh parsley, chopped
2 Tablespoons fresh cilantro, chopped
1 lemon, sliced
Place rice, water, and herbs in a saucepan and stir, place sliced lemon on top of rice, bring to a gently boil. Reduce heat to low, and cover, cook for 20 minutes. Remove lemon slices and fluff with fork. Serve.
Serve Whiskey Glazed Salmon over rice, garnish with chopped scallion.
