Old fashioned yeast waffles with warm maple syrup and bacon from local Amish farm.

My family is very picky about their waffles. This recipe is yummy. The waffles are nice and fluffy. Well worth the effort!
Yeast Waffles
1 packet of active dry yeast
1/4 cup warm milk
3 large egg yolks
1/4 cup warm milk
3/4 cup melted butter
1/2 cup sugar
2 teaspoons vanilla extract
4 cups flour
1 teaspoon cinnamon (optional)
1/2 teaspoon nutmeg (optional)
2 1/4 cup lukewarm milk
3 large egg whites
Follow directions in order for best results
in a small bowl, whisk together 1/4 cup warm milk and packet of yeast. let stand till yeast is dissolved, about 5 minutes.
As you wait, in a large bowl (batter will rise) whisk together egg yolks, 1/4 cup warm milk, ands melted butter.
Whisk in yeast mixture, sugar, and vanilla.
Gradually alternate 2 1/4 cup lukewarm milk and flour (sift cinnamon and nutmeg into flour if you like) until well mixed.
In a separate bowl, beat egg whites until soft peaks form. Fold into wet batter until well incorporated.
Set in warm place, cover with tea towel , and let rise for one hour.
Whisk to deflate batter. Warm an oiled waffle iron, spread 1/4 cup batter (or as directed according to your waffle iron) and bake. Serve warm with butter and maple syrup or your favorite waffle topping.
This makes a lot of waffle batter, so I freeze the extra waffles to use during the week. Just pop them in the toaster.
