SALMON PATTIES
(Serves 4-6)
1 can (15-16 ounces) pink salmon
1 egg
1/3 cup minced onion
1/2 cup plain bread crumbs
salt n pepper to taste
1/2 tsp dried or fresh, chopped basil
1/2 tsp dried or fresh, chopped parsley
1 tsp mustard
dash of Worcestershire sauce
1/4 cup mayo
In a medium mixing bowl, mix salmon (center bones removed, save liquid ), and dry ingredients and onion, add all wet ingredients, and mix well. Form into small patties and fry until golden brown. serve with tartar sauce
Homemade Tartar Sauce
1/2 cup of mayonnaise dressing
1/2 cup plain greek yogurt
2 medium sized sweet gerkins, chopped fine
1 tablespoon of grated onion
2 tablespoons of minced parsley
1 teaspoon of paprika
1/2 teaspoon of mustard
1 teaspoon of salt
