Saltine Marguerites, an old fashioned treat from your grandmother's era. My family loves these very vintage treats that my husband's Grandma Ward used to make. Quick, inexpensive and easy to make these salty-sweet dollops will melt in your mouth.
3 egg whites
1 tsp vanilla
1/2 cup sugar
saltine crackers, one sleeve from the 4 pack
Whisk egg whites with electric mixer until stiff, Then add the vanilla and the sugar by gradually sprinkling sugar over egg whites, whipping the mixture until glossy. Fold in any combination of optional adds. Line cookie sheet with Saltines and drop egg whites by teaspoonful onto each cracker. Bake in pre-heated 425 degree oven for 5-6 minutes, or just golden on top. Don't over cook or egg whites will become chewy.
optional, add one or more of the following by folding into egg whites:
raisins
chopped nuts
mini chocolate chips (that's what I used tonight, pictured below)
