Baked Cheese Sandwiches, perfect with a cup of tea.

8 slices of sourdough or shepherd's bread (4 sandwiches)
Cheese of your choice, 8 portions (smoked gouda, brie, or gruyere are all good)
8 slices honey baked ham
8 thin slices tomato
4 eggs
2 ½ cups whole milk
1 teaspoon sweet hot mustard
1 Tablespoon fresh basil, chopped
salt & pepper to taste
chopped parsley
paprika
Lightly grease a shallow baking dish, assemble 4 sandwiches with bread using cheese, ham, and tomato and arrange in baking dish.
In a separate bowl, whisk together eggs, milk, mustard, and basil, salt n' pepper to taste. Pour mixture over sandwiches, let stand 45 minutes. Bake in pre-heated 350 degree oven for 40 - 45 minutes. Sandwiches will puff to a golden brown.
After baking garnish with chopped parsley, and a sprinkle of paprika. Serve warm with arugula salad.
3 cups arugula
2 Tablespoon thinly sliced shallots
1 pear
2 California dates, chopped into little pieces
1.5 oz asiago cheese, sliced with a potato peeler
1/4 chopped walnuts
toss all ingredients together in a large bowl, top with dressing
Dressing:
2 Tablespoons balsamic vinegar
2 Teaspoons sweet hot mustard
1 Tablespoon honey
½ cup olive oil
salt and pepper to taste
whisk all ingredients together.
