Flourless chocolate hazelnut cake, chocolate recipe, brought to you by Woman's Day
Ingredients
200 g chopped dark chocolate
150 g chopped butter
1 tbsp instant coffee powder
6 separated eggs
2/3 cup caster sugar
1 1/2 cups hazelnut meal
cocoa, to dust
thickened cream, whipped, to serve
Steps
Preheat oven to moderately slow, 160°C. Lightly grease and line the base and side of a deep, 22cm round springform pan.
In a small saucepan, combine chocolate, butter and coffee powder. Stir over low heat, until melted and smooth. Cool slightly.
In a bowl, using an electric mixer, beat yolks and sugar together, until thick and creamy. Add chocolate mixture, then hazelnut meal, beating until combined.
In a large clean bowl, using an electric mixer, beat egg whites until soft peaks form. Using a metal spoon, gently fold through chocolate mixture.
Pour batter into pan. Bake 55-60 minutes until cooked when tested. Cool in pan 10 minutes. Turn onto a wire rack to cool completely.
Dust with cocoa and serve in wedges with cream.
