Gluten-free muesli, rice recipe, brought to you by Woman's Day
Ingredients
3 cups rolled brown rice
2 cups puffed brown rice
2 cup srice bran flakes
3/4 cup unsalted pistachio kernels
1/2 cup dried pears, chopped
1/2 cup dried apricots, chopped
1 cup linseeds
1 cup sunflower seeds
1 cup almonds
fresh fruit of your choice, to serve
low-fat milk, to serve
yoghurt, to serve
Steps
In a bowl, combine rolled rice, puffed rice, rice bran flakes, pistachios and chopped fruit.
In a food processor, combine linseeds, sunflower seeds and almonds. Process until lightly crushed. Stir into puffed rice mixture until combined. Pour into an airtight container and keep for up to 5 days.
Serve 1/2 cup portions of the muesli with fresh fruit and low-fat milk or yoghurt.
Tips
Puffed grains usually have a high GI. To counter this and make a breakfast to sustain you through the morning, add nuts and a few seeds.
