Sweet pickled celery

Ingredients

6 celery sticks, cut into matchsticks

1 large red onion, thinly sliced

2 cupscider vinegar

1 cupsugar

1 tbspyellow mustard seeds

1 tspblack peppercorns

2 small dried bay leaves

Steps

Cook celery and onion in a saucepan of boiling, very salty water for 3 minutes. Drain.

Combine vinegar, sugar, mustard seeds, peppercorns, turmeric and bay leaves in a saucepan over high heat. Cook and stir for 3 minutes or until sugar has dissolved. Add celery and onion; simmer for 2 minutes Remove from heat.

Spoon hot celery pickle mixture into hot sterilised glass jars. Seal, then cool to room temperature. Store or serve.

Tips

Before sealing jars containing hot mixture, use a skewer to release any trapped air bubbles.

To sterilise jars: Wash jars and lids in hot soapy water, rinse in hot water, then dry in a low oven.
