Cheeseburger Spring Roll

Ingredients:
(makes 20-25 approx)
250g lean steak mince
1/4 white onion, finely chopped
1 clove garlic, finely chopped
salt and pepper
sheets of filo pastry
processed cheese slices (1 per roll)
sliced gherkins
1 beaten egg
veg oil for frying
Method:
Put the mince, onion, garlic, salt and pepper in a pan over a medium heat and cook until the mince is brown.
Drain off any excess fat using a sieve.
Take a sheet of filo and lay a slice of cheese onto it, add a slice of gherkin then the burger mix.
Brush the filo with the beaten egg and roll, making sure the ends are completely sealed (otherwise the cheese will escape while cooking). If unsure just take another sheet of filo, lay your roll on it and roll another sheet to be double secure – this will also make extra crispy rolls.
Heat your oil to 170C and fry each roll until golden brown before draining on kitchen roll.
