1 lb. beef round steak
1 tbsp. cooking oil
1 (15 1/2 oz.) can meatless spaghetti sauce
2 tbsp. water
1/2 c. chopped green pepper
1/2 c. shredded carrot
Dash pepper
Hot cooked spaghetti or noodles; optional
Carrot top; optional
Grated Parmesan cheese
Cut round steak into 4 serving size pieces. Use a meat mallet to pound the steak until it is 1/4 inch thick. Preheat a 10 inch microwave browning dish on 100% power (high) for 5 minutes. Add cooking oil to the browning dish, swirling to coat the dish. Add the steak pieces. Cook, uncovered, on high for 2 minutes. Turn the steak pieces over. Cook, uncovered, on high for 2 minutes more.
For sauce, stir together spaghetti sauce and water. Stir in green pepper, carrot, and pepper. Pour sauce over steak pieces in the browning dish. Cook, uncovered, on high for 7-9 minutes or until the steak is tender, stirring the sauce and rearranging the steak twice. Serve steak and sauce over hot cooked spaghetti or noodles, if desired. Garnish with a carrot top and pass Parmesan cheese, if desired. Serves 4.
