Mixed cold meat tart

Serves 6
You will need
4 large eggs
60 ml (¼ cup) mayonnaise
250 ml (1 cup) milk
30 ml (2 tbsp) chutney
30 ml (2 tbsp) sweet chilli sauce
4 slices of bread, soaked in
60 ml water or milk
500 ml (1-2 cups) mixed cold
meats, cut into strips
1 onion, finely chopped
1 clove garlic, finely chopped
1 each red, green and yellow
pepper, finely chopped
60 ml (¼ cup) fresh or 15 ml
(1 tbsp) dried parsley
salt and pepper
250 ml (1 cup) grated
Cheddar cheese
Method
1. Preheat the oven to 180°C and lightly grease a baking dish with oil or spray with cooking spray. In a large mixing bowl, whisk the eggs and mix with the mayonnaise, milk, chutney, sweet chilli sauce and soaked bread until well combined.
2. Add two thirds of the cold meat strips, the onion, garlic, pepper and half the parsley. Season with salt and pepper. Transfer the mixture into the prepared dish. Mix the cheese, the rest of the cold meat and parsley and then sprinkle on top of the mixture (reserve a handful of the cheese mixture).
3. Bake in the oven for 35 to 40 minutes until set in the middle or a knife comes out clean when inserted in the middle.
Sprinkle the rest of the cheese mixture and bake for a further 5 minutes until golden.
4. Remove from the oven, place on a cooling rack to cool slightly, then cut or scoop out in pieces and serve with a green salad for lunch or steamed veggies for supper.
