The banting breakfast pancake sandwich

The breakfast pancake sandwich - its basically a healthy and good for your McMuffin
Its a good idea to use a breakfast ring to help keep the shape
To make the Low Carb Cream Cheese Pancakes
2 eggs, beaten
85g cream cheese, softened
1-2 tbsp. heavy cream
1tsp xylitol if you like it a bit sweeter
Pinch of salt
Coconut oil or butter
Stir all the ingredients together in a bowl.
Pour half the batter into a pre-heated non-stick pan (with a little butter or coconut oil added to the pan).
Cook until each side is done. Cook the other half of the batter.
You can pour into your egg ring to get that round shape
Makes 2 pancakes.
For the filling
1 large egg
Cheese - your choice
Home made mince patty - you can use the egg ring to make the size of the patty the same as the pancake
Grill your patty in coconut oil until cooked
Fry your egg - in the egg ring
Place one pancake at the bottom - add your patty, then add the cooked egg and top off with your slice of cheese
Grill in the oven at 180 for a few minutes - till cheese is melted
Top with your other pancake and ENJOY
You can also add bacon or avo for a really good breakfast sandwich.
There are many many options for this one - as long as you make the Banting pancakes
Try also Haloumi, mushrooms, left over pork shredded, sausages - this one you can CREATE to your hearts content!!
