Ingredients:
onions
butter
jeera seeds
mustard seeds
crushed garlic
curry leaves
mixed spices: dhania, coriander, jeera, turmeric, curry & chili
chopped tomatoes
chopped fresh coriander
chopped green spring onions
eggs
Directions:
I just made caro egg-chutney for dinner....
Fry onions in butter, jeera seeds, mustard seeds, fresh crushed garlic & green chillies & allow to fry. Add curry leaves, mixed spices: dhania, coriander pwd, jeera pwd, tumeric pwd, curry & chilli pwd, mix well. Then add chopped tomatoes & chopped fresh coriander & finely chopped green spring onions & mix well. Allow tomatoes to cook however fine u like it (I like mine chunky). Once cooked, add salt to taste. ....mix...break eggs gently, one by one & turn on low & cover & allow to simmer. Remove from stove when u feel eggs are cooked to your satisfaction. Garnish with coriander. Serve with freshly cooked rice, bread, roti or naan bread....njoy...Huggzz.
