Garlic Fish (Whole Baked)

Ingredients:
2 kgs fresh Line Fish
4 teaspoons freshly ground garlic
1 ¼ teaspoons fine salt
Juice of 1 lemon
1 tablespoon finely grated lemon rind
1 teaspoon white pepper
1 tablespoon freshly ground green chillies
4 tablespoons Olive or cooking oil
1 large parboiled potato (cut into circles and lightly salted)
1 red/green pepper cut into circles
Onion rings
100g butter
Method:
Clean and descale fish. Wipe dry (including cavity). Score with a sharp knife on both sides of fish.
Mix all the ingredients together and rub into the fish (as well as cavity). Leave in refrigerator to marinate overnight or a couple of hours.
Place a large sheet of foil on an oven tray. Rub a little oil on the foil. Place fish on foil. Fill cavity with parboiled potato slices and a few red pepper slices. Dot the cavity and top of fish with butter. Cover the top of fish with a few onion and pepper rings. Seal the foil over the fish ensuring there are no gaps for steam to escape.
Bake at 180’C for +- 40 minutes. Turn oven to grill. Remove foil and grill (on uppermost part of oven) until golden brown. Be careful it does not burn.
Serve with crispy rolls or garlic naan….
Can be done on a braai....
