Melkkos has always been a winner for cold days, I remember eating this at boarding school and we knew on which day to expect Melkkos. It was always a fight at the table to ensure that everyone got the same amount.
This has been made by many South African women, and there are many different ways to make it but I used this one for my children because it was very filling and tasted like pudding. My kids loved it!
INGEDIENTS:
10ml Baking Powder
7 cups Milk
3 eggs separated
200ml Cake Flour
2ml Salt
50ml Butter
50ml Cinnamon and sugar for sprinkle
METHOD:
First you Sift flour, baking powder and salt together, then rub butter in flour until it is like crumbs. Heat the milk until boiling point and keep it on low heat. Beat egg yolks and pour in a little warm milk. Be careful not to burn the milk during this process. In the milk slowly sprinkle the crumbs and stir continuously until you have used up the crumbs and cook slowly until it is cooked. Let it cool slightly, and then you beat the egg whites until stiff and fold in mixture.For a different variation, you can add spaghetti to the milk to boil, and still continue with the crumbs, if you find it thickens to much, just add milk before you add the crumbs. Mix your cinnamon with sugar and sprinkle over the mixture when dished up in plates.
