Sausage Casserole

Ingredients:
800g Kev's Home Made Beef Sausages
1 large onions cut into wedges
1 red or green capsicum, chopped
200g cherry tomatoes, halved
200g jar mild taco sauce
400g can diced tomatoes
½ cup beef stock
Method:
Preheat oven to 180°C. Lightly brown the sausages in a frypan on all sides and place into a large casserole dish.
In the same frypan add the onion and cook until softened. Then add the capsicum & cherry tomatoes and cook for 1 minute. Add the taco sauce, canned tomatoes & stock and bring to the boil.
Pour over the sausages and mix.
Cover the casserole dish and place in the oven for approx. 30 minutes.
