Filled Iron Pumpkin Recipe

Iron Pumpkin baked in the oven (large pumpkin ~ the colour is green grey) filled with loads of vegetables of your choice. Perfect for a healthy tasty dinner with a difference.
You will need:
1 large pumpkin, with the peel
Potatoes, peeled
Carrots, cut and peeled
Cabbage
Pumpkin, flesh from the inside of the large pumpkin, cut
Cream of mushroom soup mix
Cream / Milk (enough to mix, as instructions on the soup mix packet)
Salt and Pepper
Other preferred seasoning to taste
Method:
Wash the pumpkin
Cut off top part of the pumpkin, to form a lid
Remove the pips and scrape the pumpkin clean on the inside
Fill the pumpkin with your choice of vegetables
Season according to taste
Mix the soup mixture, according to the instructions on the packet using cream or full cream milk
Pour soup mix mixture into the pumpkin and close with the lid part
Place pumpkin in oven dish at 140 degrees for at least 8 hours. (If not tender, bake for longer).
(Depending on the size of the pumpkin it will serve 15 people)
