Wildebeest on Roast Butternut with Onion Mash Recipe

WILDEBEEST Served on roast butternut with onion mash and sweet chilli jam

ROASTED BUTTERNUT

Ingredients;

 1 butternut

 10 ml coriander

 1 red chilli

 5 ml garlic

 Salt & pepper

 50 ml oil

Method;

Rub all ingredients onto cut butternut

Roast butternut in oven until soft

ONION MASH

Ingredients

 2 kg soft boiled potatoes

 50ml cream

 Half an onion chopped

 2 ml fresh thyme

 100 ml butter

 Salt & pepper

Method;

Fry the onion, butter and thyme till onion is soft

Mash the potatoes while they are still hot

Mix all the ingredients in with the mash

Grill the wildebeest and serve with mash butternut and chilli jam
