South African Pancakes

A cold or rainy day is a must to have home made pancakes. Use this basic recipe to eat with cinnamon sugar, mince or chicken with a cheese sauce. It is super delicious as a desert, filled with your favourite fruit, condensed milk or just as it is… If you do not have a non stick pan, take coarse salt and rub it with a paper napkin on the base, that will help that the pancake will not stick. Do you remember as a child having those flops?
Makes about 10 pancakes
Ingredients:
250 g flour
10 ml baking powder
2 ml salt
2 eggs
250ml milk
250ml water
12.5 ml lemon juice
25ml sunflower oil
Sugar sprinkle: 200 g (250 ml) sugar &
15 ml ground cinnamon
STEPS:
1.Sift dry ingredients together in a bowl.
2.Beat eggs until light and add milk, water, lemon juice and oil.
3.Make a well in centre of dry ingredients and add the liquid. Mix and beat well until there are no lumps.
4.Cover the bowl with a cloth and let stand for about 30 minutes.
METHOD:
Heat the sunflower oil in a non-stick pan. Pour the oil and wipe the pan with kitchen paper. (Butter can be used as well) Using a large spoon, drop a spoon full of the batter into pan and turn the pan around so the batter covers the bottom of the pan. Once the batter bubbles on top of the pancake, you can turn the pancake over. Place a large plate in a saucepan with boiling water to keep the pancakes warm. Put the cooked pancake on the plate and sprinkle with cinnamon sugar. Place a lid on top of the pancakes to keep it warm. Repeat until all batter is used.
