Yskas Melktert Fridge Milk Tart

This is such an easy and delicious recipe that was given to me by Nicola Conradie from Biesiesvlei in North West Province. I just had to share it with you. They had their own dairy on the farm, so the milk was full of cream and of course fresh which makes it all the more awesome. It still is an all time favourite of hers, served with her special coffee made with fresh milk and this delicious ‘Melktert’. Thank you Nicola for this recipe, we will always remember the good times we had on the farm!
Ingredients:
1 Litre milk
3 Tablespoons butter
4 Eggs
1 Cup sugar (250ml)
3 Heaped tablespoons maizena
3 Heaped tablespoons flour
1/2 Taple spoon custard powder
¼ Teaspoon salt
1 Teaspoon vanilla.
1 Packet of Tennis Biscuits
Cinnamon sugar. (Cinnamon mixed with sugar)
Method:
1. Pack Tennis Biscuits neatly on the bottom of your 2 Litre fridge tart dish.
2. Beat the eggs and sugar until fluffy and light.
3. Make a mixture in a cup with the mazeina, flour, custard powder, salt and vanilla with a little of the milk as not to form lumps.
4. Pour milk and the butter in saucepan and bring to boil. Be careful not to burn the milk.
5. Add the mazeina mixture and lastly the eggs and sugar slowly using a wisk. Place back on very very low heat and constantly mix with a whisk while you let it simmer for at least 17 minutes until thickened and completely cooked. (be careful to not let it burn)
6. Pour in prepared dish. Sprinkle with cinnamon sugar. When cool place in refrigerator for 1 hour or longer.
If you prefer to make a crust for the Milk Tart, here is a easy recipe:
Crumb a packet Tennis Biscuits. Mix half a cup of sugar with 1 cup of soft butter with 1 packet of Tennis Biscuit crumbs add 1 teaspoon of cinnamon and press this mixture in the bottom of your dish. Add your filling and refrigeratore.
