South African ( Durban) Snowballs !!

Ingredients :

125g Butter

1/2 cup caster sugar

2 1/2 cups SR flour

1tsp strawberry essence

3/4 cup strawberry jam

1 1/2 cup boiling water

1tsp pink food coloring

2 cups desiccated coconut

Method:

1)Cream butter, sugar

2)Add cream and SR flour knead into a dough

3)divide into 20 balls - Flatten slightly

4)place on baking paper covered baking tray

Bake in a 180c preheated oven for 15min- till golden

5) mix boiling water jam,coloring, and essence in a bowl till smooth.

6)sandwich two cooled cakes with some jam

7) dip the two sandwich cakes into syrup

8) roll into coconut
