Apple bundt cakes

• 140 g butter
• 250 ml (1 c) flour
• 125 ml almond flour
• 7,5 ml baking powder
• a pinch of salt
• 2,5 ml cinnamon
• 85 g brown sugar
• 30 ml (2 T) maple syrup
• 2 eggs
• 5 ml (1 t) vanilla essence
• 3 apple, grated
• 250 ml (1 c) castor sugar
• 5 ml (1 t) cinnamon
Preheat the oven to 180 °C.
1. Place the butter in a small saucepan and cook until the milk solids start to turn brown on the bottom of the pan and smell nutty. Strain and let it cool slightly.
2. In a large bowl, whisk together the flour, baking powder and salt. In a separate bowl, whisk together the brown sugar, maple syrup, eggs and vanilla.
3. Add the butter and whisk. Add the mixture to the dry ingredients and whisk together. Fold in the grated apples.
4. Divide the batter in mini bundt pan moulds. Bake for 20 minutes or until firm and golden brown. Allow the cakes to cool before removing from the pan.
5. Combine the castor sugar and cinnamon. Toss the cakes with the cinnamon sugar until fully covered and serve.
