Apple cake in a frying pan

• 3 apples, peeled, sliced
• juice of ½ lemon
• 50 g butter
• 310 ml light brown sugar
• 330 ml (1⅓ c) flour
• 5 ml (1 t) baking powder
• 2 ml (¼ t) bicarbonate of soda
• 5 ml (1 t) cinnamon
• 2 eggs
• 80 ml (⅓ c) oil
• 250 ml (1 c) milk
Preheat the oven to 180 °C.
1. Toss the apples in the lemon juice and set aside. Melt the butter in a 20-cm ovenproof frying pan on low heat. Stir in half of the sugar and cook, stirring for 2 minutes or until the sugar has dissolved.
2. Lay the apples in the pan overlapping each other. Remove from the heat and set aside. Sift the flour, baking powder and bicarbonate of soda into a large bowl. Stir in the cinnamon and remaining sugar.
3. In a separate bowl whisk together the eggs, oil and the milk. Add the egg mixture to the dry ingredients and fold in with a wooden spoon.
4. Pour the batter over the apples in the pan. Bake for 30 minutes or until firm and cooked. Cool the cake in the pan for 5 minutes then turn it onto a serving plate.
