Beef burger with relish

Serves: 4 – 6

• 500 g beef mince
• 1 onion, finely chopped
• 2 cloves garlic, roughly chopped
• 15 ml (1 T) ground coriander
• 10 ml (2 t) ground cumin
• 2 eggs
• 125 ml (½ c) breadcrumbs
• handful of parsley
• salt and pepper to taste
Relish
• 15 ml (1 T) butter
• 15 ml (1 T) olive oil
• 2 onions, thinly sliced
• 4 tomatoes, chopped
• 15 ml (1 T) brown sugar
• 2 cloves garlic, crushed
• 10 ml (1 t) paprika
• 1 baguette, cut
• handful coriander
1. In a large mixing bowl combine all the ingredients for the beef burgers and refrigerate for 30 minutes or overnight.
2. Shape balls out of the mixture and flatten them slightly. Seal the burgers in a pan over high heat and place on a baking tray in the oven for any further cooking.
3. Relish: In a pan over medium heat, heat the butter and olive oil and fry the onions until soft. Add the tomatoes and sugar and simmer for 5 minutes.
4. Add the garlic and paprika and stir until combined. Place the patties and coriander on a sliced baguette.
