Spaghetti with easy chicken sauce

Serves 4
Preparation time: 10 min
Cooking time: 20 min
PASTA
• 300 g spaghetti
SAUCE
• 100 g sun-dried tomatoes in oil, roughly chopped
• 15 ml (1 T) tomato paste
• 1 packet (200 g) black olives, pitted and roughly chopped
• 2 cooked chicken pieces, shredded
TO FINISH
• 50 g Parmesan cheese shavings (optional)
• 1 packet (40 g) rocket leaves
1 PASTA Cook the pasta according to the packet instructions until just done. Drain, reserving 125 ml (½ c) of the pasta water.
2 SAUCE Bring the reserved pasta water, sun-dried tomatoes with their oil, tomato paste and olives to the boil and simmer until fragrant.
3 Add the chicken and heat through.
4 Add the sauce to the drained pasta and toss.
5 TO FINISH Top with Parmesan cheese shavings (if using). Serve with the rocket piled on top.
