Creamy pasta salad

Serves 6-8
Preparation time: 30 min
Cooking time: 20-30 min
• 500 g fusilli (pasta twists)
• butter
• 2 onions, finely chopped
• 3 garlic cloves, finely chopped
• 4 tomatoes, sliced
• salt and pepper
• 2 green or red peppers, chopped
• 500 g mushrooms, sliced
• 500 g bacon, chopped
• 250 ml (1 c) mayonnaise
• mixed with 250 ml (1 c) natural yoghurt
1 Cook the pasta according to packet instructions, drain and rinse under cold running water.
2 Heat 20 g butter. Fry onions and half the garlic until soft.
3 Add tomatoes and simmer until cooked. Season with salt and pepper, and transfer to a salad bowl.
4 Heat a little butter and fry the peppers until they begin to brown. Add to tomato mixture.
5 Fry the mushrooms with the rest of the garlic until cooked. Add to the mixture in the bowl.
6 Cook the bacon, add to bowl. Mix in pasta and leave to cool.
7 Stir in the mayonnaise and yoghurt mixture.
