Kick-start dried fruit compote

• 500 ml (2 c) red wine
• 80 ml (⅓ c) sugar
• 1 cinnamon stick
• 2 star anise
• 1 ml (¼ t) vanilla seeds
• 16 dried prunes, pitted
• 16 dried figs
• 16 dried apricots
• 60 ml (¼ cup) cranberries
• plain yoghurt
1. Bring wine, 250 ml (1 c) water, sugar, cinnamon stick, star anise and vanilla seeds to a boil in large saucepan. Add prunes, figs, apricots and cranberries and bring to a gentle simmer for 30 minutes.
2. Cool, remove cinnamon stick and star anise and chill for 30 minutes. Serve over plain yoghurt.
