Nana pudding

• 250 ml (1 c) flour
• pinch of salt
• 125 ml (½ c) castor sugar
• 15 ml (1 T) baking powder
• 2 ripe bananas, mashed
• 250 ml (1 c) milk
• 50 g butter, melted
• 1 egg, lightly beaten
• 5 ml (1 t) vanilla essence
TOPPING
• 250 ml (1 c) brown sugar
• 45 ml (3 T) golden syrup
• 250 ml (1 c) boiling water
Preheat oven to 180 °C and grease a baking tray with butter.
1. Sift the flour, salt, sugar and baking powder into a large mixing bowl. Add the bananas, milk, butter, egg and vanilla essence and whisk until just combined. Pour into the baking dish.
2. TOPPING: Put the brown sugar, golden syrup and boiling water into a small saucepan and bring to the boil. Carefully pour half the sauce over the pudding and bake for 30 minutes or until cooked through.
3. While still hot pour the remaining sauce over the pudding and serve warm or at room temperature.
