Ultimate easy BLT sandwich

• 1 baguette roll

• 250 g streaky bacon, grilled

• rocket for serving

• 3 eggs, fried

SALSA

• 2 tomatoes, chopped

• 4 spring onions, chopped

• handful coriander, chopped

• 2 red chillies, chopped

• 15 ml (1 T) olive oil

• 15 ml (1 T) red wine vinegar

• salt and pepper

1 Slice the whole baguette through horizontally. Top with the bacon, rocket and eggs and slice across for serving.

2 Salsa Mix the salsa ingredients together in a mixing bowl and serve on the side with the sandwich.
