Bedien saam met platbrood en tamatie/uie konfyt

1 Kalkoen

4 Hoenders

8 Uie

1 Bos Seldery

Sout na smaak

8 Swartpeperkorrels

2 Lourier blare

Gelatien

Stoom die kalkoen en hoenders tot die vleis van die bene afval. Behou die vloeistof en laat afkoel

Ontbeen die kalkoen en hoender.

Sny die uie op in skyfies en soteer saam met die met die gesnyde seldery tot sag en deurskynend in ‘n bietjie olyfolie en 1 eetlepel botter.

Maal die vleis en groente saam.

Toets die smaak en pas die sout en peper aan indien nodig.

Maak gelatien aan met die afgekoelde vloeistof waarin die hoender en kalkoen gekook het volgens die aanwysings op die pakkie. Ek gebruik 2 teelepels gelatien per 500ml vleismengsel.

Meng die gelatien en die vleismengsel goed deur.

Giet en bakke en laat oornag stol.
