5-ingredient bread with flavoured butter

BREAD
• 750 ml (3 c) flour
• 5 ml (1t) bicarbonate of soda
• 5 ml (1t) castor sugar
• 1 egg, lightly beaten
• 300 ml buttermilk
BUTTER
• 100 g butter, at room temperature
• 1 clove garlic, minced
• 3 sprigs, fresh thyme, chopped
• small handful of fresh coriander, chopped
Preheat the oven to 180 °C and line a loaf tin with baking paper.
1. Bread Sift the flour and bicarbonate of soda into a large bowl with sugar and a pinch of salt.
2. Make a well in the middle in the flour mixture. Pour in the egg and buttermilk and fold using your hands until the mixture just comes together. Add more buttermilk if necessary.
3. Turn out on a well-floured surface. Lightly knead the dough for a few seconds before putting it in the prepared loaf tin. Bake for 15 minutes.
4. Lower the temperature to 160 °C and bake for 30 more minutes or until cooked through. Allow to cool.
5. Butter In a bowl beat the butter, garlic, thyme and coriander until well incorporated.
