Cauliflower ‘mac’ and cheese

• 2 heads cauliflower, divided into florets
• 30 ml (2 T) butter
• 250 g bacon pieces
• 30 ml (2 T) flour
• 250 ml (1 c) milk
• 200 g goat’s milk feta cheese, crumbled
• salt and pepper
• 5 ml (1 t) nutmeg
Preheat the oven to 180 °C and grease a baking dish with butter.
1. Blanch the florets in boiling water, drain and then arrange them in the baking dish and set aside.
2. Melt the butter in a saucepan over medium heat, stir in the bacon and cook until slightly browned.
3. Add the flour to form a paste and cook while stirring for 2 minutes. Add the milk a little at a time, stirring to combine after each addition. When the mixture begins to boil, reduce the heat and simmer over very low heat for 10 minutes.
4. Remove from the saucepan from the heat, stir in the cheese and season to taste. Pour the cheese sauce over the cauliflower and sprinkle with nutmeg. Bake for 15 minutes or until golden and bubbling.
