Makes 4-6 small loaves
Preparation time: 15 min
Standing time: 1 hour
Baking time: 20-30 min
• 50 g butter, melted
• 1 kg readymade bread dough
• 1 can (175 g) smoked mussels
• 1 can (410 g) whole-kernel
• sweetcorn, drained
• 150 g cheddar cheese, grated
1 Preheat the oven to 180 °C and dust the work surface with flour.
2 Grease 4-6 empty 410 g cans with melted butter or nonstick food spray.
3 Leave dough to rise for 20-30 minutes.
4 Knead the dough on the flourdusted surface.
5 Mix the mussels, sweetcorn and cheese into the dough, using your hands.
6 Knead well until everything is thoroughly mixed.
7 Divide the dough into equalsized balls and put one ball in each can.
8 Leave to rise in a warm place for 20-30 minutes.
9 Brush the tops of the dough with the remaining melted butter.
10 Bake for 20-30 minutes or until cooked. Tap the tops of the loaves – they’re done when they sound hollow.
8 Remove loaves from cans. Set aside to cool.
TIP: To give bread or rolls a golden brown colour, brush with melted butter or use a beaten egg instead of the butter.
