Slow-cooked pork with potatoes

Pork
• 1 kg pork roast
• 2 onions, roughly chopped
• 400 g chopped tomatoes
• 5 ml (1 t) tomato paste
• 4 cloves garlic, crushed whole
• 30 ml (2 T) soy sauce
• 15 ml (1 T) paprika
• 30 ml (2 T) sugar
• salt and pepper
Potatoes
• 30 ml (2 T) oil
• 3 potatoes, cubed
• 3-cm fresh ginger
• salt and pepper
• 2,5 ml (½ t) turmeric
• 1 ml (¼ t) chilli powder
• 1 ml (¼ t) paprika
• 125 ml (½ c) water
Preheat oven to 180 °C.
1. Pork: Place all the ingredients into a roasting pan. Add 400 ml water and cover with foil.
2. Place in the oven and allow to roast for 3 hours or until the meat is tender and pulls apart easily.
3. Shred the pork with two forks and place it back in the sauce. Adjust the seasoning of the sauce if needed.
4. Potatoes: Heat oil in a large pan over medium heat. Add potatoes and ginger and sauté until potatoes are slightly browned. Mix in salt and pepper, turmeric, chilli and paprika, and sauté for 5 minutes. Add the water, cover and simmer until tender. Serve with the pulled pork.
