Bacon-covered tomatoes with sweet balsamic reduction

SERVES 4-6

Preparation: 10 min

Cooking: 15 min

• 6 tomatoes

• 12 streaky bacon rashers

• 30 ml (2 T) olive oil

• salt and pepper

• 250 g mozzarella, cut into chunks

• rocket leaves for serving

• avocado for serving

Balsamic sauce

• 250 ml (1 c) balsamic vinegar

• 80 ml (⅓ c) sugar

Preheat oven to 180 ˚C.

1 Wrap each tomato in bacon, drizzle with olive oil and season to taste.

2 Roast for 15 minutes or until the tomatoes have burst and are cooked through.

3 Serve with chunks of mozzarella, rocket leaves and avocado.

4 BALSAMIC SAUCE Put the vinegar and sugar in a saucepan. Over medium heat, stir until sugar has dissolved. Reduce heat and simmer for 4 minutes or until the sauce has thickened.
