Chocolate pancakes

They’re the perfect ending to a special dinner. Prepare the pancake batter the previous day and leave it in the fridge until you’re ready to cook the pancakes.
Makes 20 • Preparation time: 20 min • Cooking time: about 30 min
• 500 ml (2 c) flour
• 40 ml (8 t) caster sugar
• 620 ml milk
• 4 eggs
• 300 g dark chocolate
• 40 g butter, melted
• ice cream or fresh fruit plus extra
• melted chocolate and mint leaves to serve
1 Sift together the flour and caster sugar in a mixing bowl.
2 In a separate bowl whisk together the milk and eggs.
3 Add the flour mixture to the egg mixture and mix well.
4 Melt the dark chocolate in the microwave oven or in a glass bowl over a saucepan of boiling water. Mix with the batter until well blended.
5 Heat a little butter in a pan. Pour in a thin layer of pancake batter and cook until done on both sides. Repeat with the remaining batter.
6 Serve with ice cream or fruit. Drizzle with melted chocolate and garnish with fresh mint.
