Preparation time: 10-15 min
Cooking time: 10 min.
• 1 container (250 g) frozen mixed berries
• 15 ml (1 T) brandy
• 30 ml (2 T) sugar
• 1 container (250 ml) readymade custard
• 250 g mascarpone or cream cheese
• 6-8 bought meringues, roughly broken
• fresh berries (optional)
1 Bring the berries, brandy and sugar to the boil in a small saucepan. Simmer until the berries are soft and syrupy.
2 Mix the custard and mascarpone until smooth.
3 Layer the custard mixture, crushed meringues and berry mixture in small glasses, ending with meringue.
4 Chill until needed.
5 Garnish with fresh berries.
