Economical all-in-one potjie

This is a delicious dish for entertaining people at little expense.
Serves 4-6
Preparation time: 20 min
Cooking time: about 2 hours
• cooking oil
• 30 g butter or margarine
• 2 kg stewing meat (pork, beef or mutton), cubed
• 1 large onion, coarsely chopped
• 5 ml (1 t) mixed spice
• 2 whole cloves
• 1 ml (¼ t) nutmeg
• 1 ml (¼ t) dried thyme
• 12 ml (1½ t) salt
• 5 ml (1 t) freshly ground black pepper
• 30 ml (2 T) brown vinegar
• 500 ml (2 c) hot chicken or meat stock
• 1 small bay leaf
• 12 baby potatoes in their jackets
• 8 whole pickling onions, peeled
• 12 baby carrots
1. Heat 30 ml (2 T) oil and the butter or margarine in a large cast-iron pot over hot coals and brown the meat in batches. Remove and set aside
2. Heat a little more oil and fry the onion. Add the spices, thyme, salt and pepper, and stir-fry briefly to develop the flavours.
3. Return the meat to the pot on top of the onions.
4. Mix the vinegar and stock, pour into the pot, add the bay leaf and cover with the lid. Allow to simmer over slow coals for about 2 hours or until the meat is nearly tender.
5. Layer the potatoes, pickling onions and carrots on the meat and simmer for another 30 minutes until the vegetables are just cooked but still crunchy.
6. Serve with bread, pap or samp and beans.
