Orange Cake

Ingredients:

200 grams of soft margarine

200 grams of caster sugar

240 grams of sifted cake flour

1 teaspoon of vanilla essence

3 level teaspoons of baking powder

The zest of 3 oranges

The juice of one orange .

3 extra large eggs beaten.

Method:

.

Place all ingredients in a bowl and mix just until well combined .

Spoon in 2 round baking tins or into a large round baking tin or a square baking tin ..all must be greased or lined with baking paper . Bake on 180 deg c for 25-30 minutes .

Check for doneness when you insert a skewer or knife and it comes out clean .

Cool in pan for 10 minutes and remove to cool completely . Drizzle with a orange icing and top with orange zest.

For the icing mix 1 cup of icing sugar with 3 tablespoons of orange juice .
