Spiced beef ribs in oyster sauce

SERVES 4

Cooking: 55 min

• 1,2 kg pork ribs

• cooked rice to serve

Sauce

• 60 ml (¼ c) soya sauce

• 100 ml barbeque sauce

• 45 ml (3 T) water

• 5 ml (1 t) chilli flakes

• 5 cm fresh ginger, grated

• 2 cloves garlic, finely chopped

• 2,5 ml (½ t) turmeric

• 5 ml (1 t) ground cumin

• 45 ml (3 T) brown sugar

• 30 ml (2 T) oil

• pepper to taste

Preheat oven to 200 °C.

1 Bring a large pot of water to the boil over medium heat. Put the ribs in and simmer for 35 minutes or until the bones start to pull away from the meat.

2 Combine the sauce ingredients in a bowl and mix well.

3 Place the ribs and all the sauce in a roasting pan. Cook in the oven for 20 minutes or until caramelised and sticky.

4 Remove the ribs from the oven. Serve with rice.
