Creamy Texas cheese steaks

Serves 4
Preparation time: 20 min
Marinating time: 1 hour or overnight
Cooking time: 5-10 min
2,5 kg Texas steak
MARINADE
juice & grated zest of 2 lemons
25 ml (5 t) Worcester sauce
freshly ground black pepper
4 cloves garlic, peeled and
finely chopped
45 ml (3 T) olive oil
salt
TOPPING
100 g cheddar cheese, coarsely
grated
100 g mozzarella cheese, grated
145 g blue cheese, crumbled
2 eggs, whisked
30 ml (2 T) wholegrain mustard
salt and freshly ground black
pepper
30 ml (2 T) chopped parsley
TO SERVE
roast potato wedges and
rocket salad
1 Cut meat into 200-230 g steaks.
2 MARINADE Mix all ingredients, except salt, and marinate steaks for 1 hour or overnight.
3 Preheat the oven to 230 °C. Heat a ridged pan until very hot.
4 Bake half the steaks for 2-3 minutes a side then season with salt once sealed. Reheat the pan
until very hot and cook the remaining steaks. It’s important to seal the steaks at high heat; they
will still be raw inside.
5 Transfer the steaks to a lightly oiled baking sheet and leave them to rest for a few minutes.
6 TOPPING Mix the ingredients and spoon the mixture on top of the steaks, dividing it evenly between steaks.
7 Bake steaks in the oven for about 5 minutes (medium) or until the cheese melts. Cook a few minutes longer for well-done.
8 TO SERVE Serve with roast potato wedges and rocket salad.
