Snoek with apricot glaze

Serves: 6
500 ml (2 c) sugar
1 litre (4 c) water
2 cinnamon sticks
300 g dried apricots
salt and freshly ground black pepper
1 kg snoek/hake
45 ml (3 T) butter, melted
chips to serve
Place the sugar, water and cinnamon sticks in a saucepan over low heat until the sugar dissolves.
Add the apricots and cook on low heat for 1 hour or until soft and sticky.
Preheat the grill.
Season the snoek well, drizzle with the butter and grill for 10 minutes or until cooked, basting regularly with the apricot glaze.
Serve the snoek with the apricots and chips.
