SOUTHERN BANANA PUDDING

INGREDIENTS
3-1/2 tablespoons all-purpose flour
1-1/3 cups sugar
dash of salt
3 egg yolks
3 cups of whole milk
1 teaspoon vanilla extract
1-1/2 boxes of vanilla wafers (the recipe only calls for one box but I love a lot of wafers)
6 medium bananas
INSTRUCTIONS
1. Combine flour, sugar, and salt in heavy saucepan.
2. Beat egg yolks; combine egg yolks and milk, mixing well.
3. Stir into dry ingredients;
4. Cook over medium heat, stirring constantly, until smooth and thickened.
5. Remove from heat; stir in the vanilla.
6. Layer one-third of the vanilla wafers in a 4 quart baking dish.
7. Slice 2 bananas; layer over wafers.
8. Pour one-third of the filling over bananas.
9. Repeat layers twice.
Yield: 10 servings
