Ingredients dough:
5 cups flour (sifted)
1 tablespoon fine salt
2 teaspoons active dry yeast
2 ½ cups luke warm water
Ingredients Garlic butter:
8 to 10 cloves garlic (crushed)
½ cup finely chopped shallot
200g butter/ghee
METHOD:
Sift flour and salt into bowl. Add dry yeast. Toss. Make a soft, pliable dough with the warm water, adding a little at a time. Knead well. Grease a bowl (lightly) with some olive oil or butter and place dough in it. Cover with cling wrap and leave to rise in a warm place 2 to 3 hours or until double its size.
Add garlic and butter/ghee to a pan and quickly bring to boil. Cool slightly and add shallot. Set aside.
Preheat oven to 350’C (really high)… Place an oven tray upside down (inverted), brush with oil and sprinkle some flour over it. Place in oven to heat.
Divide dough into 5 pieces. Roll out into oval shape about ½ cm thick. Spoon the garlic/butter mix over and lightly spread out over dough. Throw this dough over the heated inverted oven tray and bake 8 to 10 minutes.
Alternatively, you can add the garlic butter mix after the naan has cooked in the oven…
Repeat until all 5 pieces of dough are baked…
Serve warm with curry/grill of choice….
