Eiers in Tamatiesous met Boerewors

150gr. Boerewors, vleis verwyder uit die omhulsel

2 Koppies tuisgemaakte Tamatiesous

4 Eiers

Vars Koriander

80gr. Fetakaas, gekrummel

4 Snye Brood, liggies gerooster

Swartpeper na smaak

• Begin deur die vleis van die boerewors in ‘n mediumwarm pan te plaas. Geen olie word benodig nie.

• Breek die vleis in effens kleiner stukkies met ‘n lepel. Voeg die tamatiesous by voordat die vleis deurgekook is en roer totdat dit goed gekombineer is. Bring tot kookpunt en roer ‘n paar keer.

• Voeg nou die eiers by, plaas ‘n deksel op die pan en kook totdat die eierwit geset het, maar die eiergele steeds loperig is.

• Sprinkel die vars koriander, fetakaas en swartpeper oor die pan en bedien dadelik met die geroosterde brood.
