Olie

1 klein ui, gekap

1 klein wortel, gekap

2 knoffelhuisies

Sout en peper

500 ml witasyn

Takkies vars roosmaryn, tiemie en pietersielie

3 lourierblare

6 koljandersade, gekneus

12 heel witpeperkorrels, gekneus

1 kg knopiesampioene, skoongemaak

Verhit ‘n bietjie olie en braai uie, wortels en knoffel sowat 5 minute tot sag. Voeg sout, peper, asyn, kruie, koljander, peperkorrels en 500 ml water by. Verhit tot kookpunt en kook onbedek vir 10 minute.

Plaas sampioene in ‘n groot plastiek- of glashouer en giet mengsel oor. Bedek en laat oornag.

Dreineer sampioene en pak saam met gedreineerde kruie en speserye in ‘n fles. Vul met olie en verseel. Laat 3 – 4 weke staan.
