Sausage rolls

Baking time: 20 min
2 sheets (500 g) readymade puff pastry, defrosted
30 ml (1 T) wholegrain mustard
600 g boerewors, cut into 4 pieces
1 egg, whisked
1 Preheat the oven to 200 °C. Line a baking sheet with baking paper.
2 Cut each sheet of pastry in half. Spread with the wholegrain mustard, leaving a 2 cm border.
3 Remove the casing from the sausage and place the meat of 1 sausage along the long edge of one of the pastry pieces. Roll the pastry over the meat, pinch the edges to seal then brush with the egg. Repeat with the remaining pastry and sausage meat.
4 Transfer to the baking sheet and bake for 20 minutes or until pastry is puffed and meat is cooked.
