Carrot and Cranberry Sweet and Sour Pickle.

1kg Carrots
500g Cranberries
750ml vinegar
1tbls salt
150g pickle masala
12cloves garlic
12 green chillies slit
4sprigs curry leaves
1tbls jeera seeds
1tbls mustard seeds
1/2 cup vinegar
1cup sugar
1cup oil
Method
Peel and slice carrots in small thick strips.Soak in vinegar and 1 tbls salt.Allow to soak for 3hrs.Drain well.Add cranberries and pickle masala,mix well.Heat the 1 cup sugar and half cup vinegar and bring to the boil,as soon as syrup is clear remove and add to carrot mix well.Make a vagaar by heating the 1cup oil,remove and add mustard seeds,jeera ,curry leaves,garlic and chillies.Allow to cool completely and mix well into pickle.Store in an air tight jar.
