Hot cross buns

1 med egg
1/2 cup water
1/2 cup milk (buttermilk for moist bread)
1.5 tsp instant yeast
1/4 tsp allspice
1/4 tsp nutmeg
1/2 tsp cinnamon
3.5 table sp sugar
3.5 tbsp butter/ghee
1 tsp salt
4 cups flour (be careful with last cup as you might not need all)
2/3 cups raisins
Add lukewarm water, sugar and yeast. Let it stand for 15 min.
Add all other wet ingredients and mix. Add spice and raisins(optional) Add flour and knead until you have a smooth dough. Rub the ball of dough with a drop of oil so the dough does not dry out. Leave covered in a warm room to rise until doubled in size.
Knead down the dough and divide in 8 pieces. Let rise till double in size. Make a cross by mixing water and flour until smooth and pipe onto risen dough.
Bake at 200 degrees for 15-20 min
Melt apricot jam and a little bit of water in a pot. Brush this over the buns as soon as they come out of the oven.
